Celebrating 80 years of brown flavour expertise and why that heritage matters more than ever when commodity markets cannot be relied upon

Cocoa prices hit record highs in 2024, and coffee prices soon followed, surging to their highest level on record. At the same time, vanilla from Madagascar remains vulnerable to climate risk and seasonal price swings, and nut supply chains face mounting pressure of their own. The EU Deforestation Regulation, now in force for large companies, is tightening traceability requirements across every supply chain that touches cocoa, coffee and beyond. The ingredients at the heart of so many food and drink products have spent the last two years at the centre of one of the industry’s most disruptive commodity crises.

It is precisely this moment that PROVA was built for. In 2026, the French family business turns 80: eight decades of building relationships with vanilla farmers in Madagascar, developing cocoa and coffee sourcing networks, and refining the art and science of brown flavour extraction. Eighty years in these supply chains means PROVA anticipates volatility, not reacts to it.

For food manufacturers, whether in biscuits and cereals, dairy, confectionery, beverages, ice cream, nutrition or savoury applications, the question is no longer simply which flavour to use. PROVA was founded in France in 1946 by Marcel and Jacqueline Acat. Their starting point was vanilla, and a proprietary extraction process developed at a time when most competitors were simply buying on the open market. That founding instinct to go deeper, to understand the source, to control the process, and to build relationships that outlast any single season, has shaped everything that followed.

Over the next eight decades, PROVA progressively expanded its aromatic expertise from vanilla into the full family of brown notes: cocoa, coffee, caramel, nuts and indulgent dairy profiles. Generation by generation, the company deepened its roots in the supply chains that matter most, not as a buyer, but as a long-term partner to the farmers and communities it depends on. That continuity is itself the asset: third generation under Muriel Acat, granddaughter of the founders, carrying forward the same instinct that built the business in 1946.

Under her presidency, the company has grown to €120 million in annual revenue, with 12 subsidiaries, four production sites across France and Asia, and 470 employees. It is among the top 10 global vanilla buyers.
